Place washed cauliflower in a food processor and process until cauliflower is in small rice like pieces.

In a large pan, heat coconut oil at medium heat. Sautee onions until golden and fragrant, about 5min, and then add ground beef, and spices, garlic and ginger and cook until meat is cooked through – about 10min.

Add cauliflower rice to the meat mixture and stir in beans. Taste and adjust seasoning.

Top with fresh tomato salsa (chopped tomatoes & red onion) & mashed or diced avocado.

Sprinkle with real salt and optional hot sauce.

Enjoy!

*Beans contain phytic acid, which can block the absorption of essential minerals. Buy organic dry beans and soak them, to neutralize the phytic acid & bring life back into the dry beans.

Tip: soak in bulk, cook, cool and then store in separate containers in the freezer for quick use.
