This is one of my go-to recipes leading up to summer and into the summer months.
This Easy Tomato Basil Pesto is not only delicious, but it’s also loaded with nutrient dense ingredients that help you detox and feel amazing! Pair it with zucchini noodles and grilled shrimp and you’ve got a perfect meal!
Easy Tomato Basil Pesto ‘Pasta’ with Grilled Shrimp (serves 2)
1/2 cup sun dried tomatoes
1 cups tomatoes
1 tsp olive oil
1 garlic cloves, roughly chopped
1 handful basil leaves, washed and chopped
Place all ingredients in the blender and blend until smooth.
1 large zucchini
Spiralize zucchini using a spiralizer or use a vegetable peeler
Approx 16 large shrimp, wild
1 tsp coconut oil
Season shrimp in sea salt, pepper and garlic powder.
Add coconut oil to pan and preheat a green non-stick pan at med-high heat. Sear shrimp about 5 min per side until cooked through.
Assembly for 2 option – both delish!
Option 1: Raw with Grilled Shrimp (my personal fave:))
On a plate add zucchini noodles, top with a generous amount of pesto and 5-6 grilled shrimp.
Option 2: Warmed with Grilled Shrimp
Add pesto and zucchini noodles to a non-stick pan and warm on med heat. Plate and top with grilled shrimp.
