If you’re anything like me, the cooler fall weather makes you start craving warmer comforting foods. Since I love soups and they are pretty simple to make, I wanted to share this recipe of one of my favourite ones.
Fall Navy Bean and Mushroom Soup (GF, VEGAN)
Ingredients:
- 1 pound mushrooms (about 4 cups) halved or quartered
- 2 large sweet onions, roughly chopped
- 3 garlic cloves, slightly crushed with skin left on.
- 2 cups vegetable broth
- 1 cup coconut milk
- 1 tsp cumin
- 1 tsp dried thyme
- 1 tsp sea salt
- 1 tsp pepper
- 2 cups cooked Navy beans or white beans of choice
- 1 tbsp coconut oil for roasting veggies
Preheat oven to 400℉ . Line a large baking sheet with parchment paper.
Place mushrooms on one side of the baking sheet and onions and garlic on the other. Drizzle with melted coconut oil and sprinkle with sea salt.
Bake for 10 minutes, toss. And then continue baking for another 10 minutes.
Meanwhile in a high speed blender (I use a Vitamix) add vegetable broth, coconut milk, spices and beans.
Once the veggies are done roasting – onion should be golden and fragrant – add the veggies to the blender (making sure to remove the skin of the garlic before placing in the blender). Blend until smooth. If it’s too thick, add water or vegetable broth until it’s your ideal consistency.
Heat whatever you will be eating immediately to a pot and heat to your liking. At this point you can also adjust salt and pepper to your liking.
Place leftovers in a mason jar and refrigerate until ready to eat.
Makes a great lunch or dinner!
