Thought I would share one of my favorite breakfast recipes with you.
If you need a break from eggs and smoothies in the am, this Protein Boosted Granola is a great alternative.
Most store bought granola is loaded with sugar and does not have enough protein to consider it a balanced meal. You want to make sure that your first meal in the day is nutrient dense to get your body going and well fueled for several hours.
It’s totally kid approved too! My son Julian loves this stuff!
Protein Boosted Granola
Ingredients:
4 cups gluten free oats
1 cup pumpkin seeds
1 cup sunflower seeds
1 scoop Designs for Health Pure Paleo Protein – unflavored (haven’t tried with any other protein, I love this stuff!)
2 tbsp cinnamon
1/2 cup melted coconut oil
1/2 cup maple syrup
Preheat the oven to 300 degrees F. Line a large cookie sheet with parchment paper.
In a large bowl add all ingredients. Mix well.
Pour onto the prepared cookie sheet and press down evenly.
Bake at 300 degrees for 40 min – checking and rotating tray half way through.
When granola is golden on top it’s done.
Allow to cool for at least and hour and then pour into an airtight glass container for storage.
Serve ½ cup over plain organic dairy or coconut yogurt. Top with a ½ chopped apple as seen in pic.
